Christmas Deviled Eggs

Ingredients
  

  • 6 large eggs
  • 3 tbsp mayonnaise sugar-free or avacado-based
  • 1 tsp Dijon mustard
  • ½ tsp white vinegar or lemon juice
  • 1 pinch paprika
  • Salt and pepper to taste

Optional Garnishes

  • Chopped fresh parsley
  • Paprika or chili powder

Instructions
 

  • Place eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat and let simmer for 10 minutes.
  • Drain the hot water and transfer the eggs to an ice bath. Let them cool completely before peeling.
  • Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a small bowl.
  • Mash the yolks with a fork until smooth. Add mayonnaise, Dijon mustard, vinegar or lemon juice, paprika, salt, and pepper. Mix until creamy and well-combined.
  • Spoon the filling into a piping bag or ziplock bag with a small tip cut off. Pipe the yolk mixture into the hollowed egg whites.
  • Sprinkle chopped parsley over the eggs for a festive green "garland" effect.
  • Arrange the deviled eggs on a platter and sprinkle lightly with paprika or chili powder for extra flavor and color. Serve immediately or refrigerate until ready to enjoy.
